Sauteed Escarole
 
2 slices white bread
 
3 tablespoons minced parsley
 
2 tablespoons butter or margarine softened
 
1 teaspoon cracked pepper
 
1 pound ground beef
 
1 tablespoon Worcestershire

Directions

1. Prepare Sauteed Escarole; keep warm.
2. Meanwhile, preheat broiler if manufacturer directs. Prepare burger topping: Into small bowl, tear bread into very small pieces. Add parsley, butter or margarine, and pepper; with hand, mix until well blended; set aside.
3. In medium-sized bowl, mix ground beef and Worcestershire. Shape beef mixture into four 1/2 inch-thick round patties. Place patties on rack in broiling pan; broil 3 minutes on each side for medium-rare or until burgers are of desired doneness.
4. Remove broiling pan from oven; spoon topping mixture on patties. Broil 1 minute longer or until topping is lightly browned.
