Penny Wafers Recipe

Ingredients
2 tablespoons currants
1 tablespoon hot water
2 teaspoons rum extract
1/4 cup butter or margarine
1/4 cup sugar
1 egg
1/3 cup all purpose flour
Directions
1. Combine currants, hot water, and rum extract in small bowl; let stand about 1 hour to blend flavors.
2. Beat butter or margarine until soft in medium-size bowl with electric mixer at high speed; beat in sugar, then egg, beating until fluffy; stir in flour and currant mixture.
3. Drop batter by teaspoonfuls, about 1 1/2 inches apart, on well greased cookie sheet.
4. Bake in hot oven (425°) 5 minutes, or until edges are golden.
5. Remove from cookie sheet with spatula; cool on wire cake racks.
