Pennsylvania Cheese Pie Recipe

Ingredients

 
2 teaspoons cornstarch
 
2/3 cup sugar
 
1 cup cottage cheese, riced
 
2 eggs, separated
 
2 tablespoons milk
 
1/8 teaspoon salt
 
1 tablespoon grated lemon rind
 
1 9-inch unbaked pie shell

Directions

Mix cornstarch and sugar; add cottage cheese, egg yolks, milk, salt and lemon rind and blend well.
Fold in stiffly beaten egg whites and pour into pie shell.
Bake in a hot oven (450° F) 10 minutes.
Reduce temperature to 325° F and continue baking 25 to 30 minutes.
Makes one 9-inch pie.
