PENNE WITH SMIRNOFF VODKA SAUCE Recipe

Vodka Sauce Penne sounds so gourmet and impressive and yet it is a very approachable dish for the home cook. This is a quick recipe if using store-bought, or better yet your own canned tomatoes. Garnish with freshly grated Parmesano-Reggiano cheese and garden basil. Served with garlic bread and a tossed salad this Penne with Smirnoff Vodka Sauce is perfect for a romantic meal for two or as an appetizer course for guests.

Recipe Story

The mere name Smirnoff conjures up a romantic history of vodka originally distilled in Moscow in the 1860s by Piotr Arsenieyevich Smirnov. The marriage of pristine vodka with tomatoes that taste of the sun results in a gourmet, but easy to make dish. This recipe is a favourite of mine for an easy, but elegant meal especially for vegetarian guests. I grow my own heirloom tomatoes and can varietal sauces; therefore I just open a jar of my home canned organic tomatoes, and proceed with this easy recipe. I often make this for just the two of us using a half recipe and serve with a baby greens garden salad. While I am making this simple recipe we usually sip a Tomato Smirnoff Martini! In the winter I add a pickled green cherry tomato, but in the summer I use an heirloom tomato like Green Zebra to make a fun martini. Heirloom Tomato Martini 2 ounces Smirnoff Vodka 3/4 ounce triple sec 1 whole lime 1/2 small heirloom tomato (Green Zebra is my favourite for this martini) 4 leaves fresh basil Muddle tomato with fresh basil in a shaker. Add ice, fresh lime juice, vodka and triple sec. Shake 10 times, strain and pour into martini glass. À votre santé!

 Carrot1 Small, chopped
 Canned crushed tomatoes32 Ounce

Directions

Simmer the tomato sauce and vodka in a heavy large skillet over medium-low heat until the mixture reduces by 1/4, stirring often, about 15 minutes. Stir the cream into the tomato and vodka sauce. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended.
Meanwhile, cook the pasta in a large pot of boiling salted water until ala dente, tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain the pasta and transfer it to the pan with the sauce, and toss to coat.
