Penne With Mushrooms In A Light Cream Sauce Recipe

Ingredients

 
1 lb. penne pasta (short tubes)
 
3 tbsp. butter
 
1 tbsp. chopped shallots or onions
 
3 cups chopped mushrooms (preferably mixed such as common, oyster, chanterelle, porcini, etc.)
 
1 1/2 cups heavy cream
 
pinch of chopped parsley
 
1/4 cup Parmesan cheese
 
black pepper

Directions

Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce.
Heat in large skillet.
Saute for 1 minute Add and cook until mushrooms begin to brown, approx. 5 minutes.
Add and cook until sauce begins to thicken, approx.5 minutes.
Add along with pasta to sauce and toss.
Add just before serving.
