Penne With Mushrooms And Chicken Recipe
Ingredients
8 oz. penne pasta (short tube)
2 tbsp. butter
2 tbsp. olive oil
2 crushed garlic cloves
1 medium sweet onion,diced
1 tbsp. chopped basil (1/2 tsp. dry)
1 tbsp. chopped parsley (1 tsp. dry)
1/4 cup white wine
1/4 cup chicken stock
1/2 cup heavy cream
2 tbsp. butter
2 tbsp. olive oil
4 oz. cooked chicken or duck, sliced (preferably smoked)
1 tomato, chopped
1/4 lb. chopped mushrooms (preferably a combination of a variety of mushrooms)
1 small bunch arugula, chopped
1/3 cup Parmesan cheese
Directions
Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce.
Melt in skillet.
Add and cook until onions are soft.
Add and cook on a medium heat for approx 2 minutes.
Add and cook for approx 2 minutes.
Add and simmer about 5 minutes.
Set mixture aside.
Melt in large skillet.
Add these ingredients and saute for 2-3 minutes.
Add above cream sauce and cook on a low heat for approx 5 minutes.
Add pasta and toss.
