Penne With Mushroom And Onion Sauce Recipe
Ingredients
1 lb. penne pasta (diagonal tubes)
2 tbsp. olive oil
3 medium onions,sliced thin
Salt and pepper
2 tbsp. olive oil
2-3 crushed garlic cloves
Sprig of rosemary
1 lb. sliced mushrooms (preferably wild€”shiitake, oyster, etc.)
1/2 cup water
1/2 cup Parmesan cheese garnish with fresh basil
Directions
Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce.
Heat in large skillet.
Add and cook until onions are soft.
Puree and set aside.
Cook in saucepan until mushrooms are tender, approx.5 minutes.
Add onion puree, pasta, and toss.
