Penne With Eggplant And Turkey Sausage Recipe
Ingredients
| 1 pound Italian turkey sausage, cut into 1-inch rings | ||
| 1 medium eggplant, cut into 1/2-inch cubes | ||
| 3 cups prepared chunky vegetable spaghetti sauce | ||
| 12 ounces penne pasta, cooked according to package directions | ||
| Asiago cheese | 4 Ounce, shredded | |
Directions
MAKING
1) Take a large nonstick skillet; heat it over medium heat and fry turkey sausage and eggplant for 12 to 15 minutes until sausage loses its pink color and eggplant is tender and lightly browned.
2) Pour in spaghetti sauce and cook for 3 minutes until done.
SERVING
3) Pour the sauce over penne and top with cheese and serve.
