Penne Vegetable Salad Recipe
There's not a single being who will be able to eat just one, is what I guarantee for this Penne Vegetable Salad. The primary ingredient in Penne Vegetable Salad is always Pasta. Best enjoyed as a Side Dish this recipe was taught to me by a dear friend who also happens to be a great chef. Just try this dish and see how you get hooked to it!
Ingredients
1 lb (500 g) penne, cooked
1 yellow pepper, in julienne
1/2 zucchini, in julienne and blanched
4 slices cooked ham, in julienne
1 large tomato, cored and in wedges
1/2 cup (125ml) pitted black olives
1 tbsp (15 ml) chopped parsley
1/2 tsp (2 ml) chopped fresh oregano
3 mint leaves, chopped
1 egg yolk
2 tbsp (30 ml) catsup
3 tbsp (45 ml) wine vinegar
1/2 cup (125 ml) olive oil
1/2 cup (125 ml) grated Parmesan cheese
1 tbsp (15 ml) chopped jalapeno peppers
Salt and pepper
Directions
In large serving bowl, toss together penne, yellow pepper, zucchini, ham, tomato, olives, parsley, oregano and mint.
In another bowl mix egg yolk with catsup.
Incorporate vinegar then slowly add oil while mixing constantly.
Add remaining ingredients and poor over salad.
