Peek-A-Boo Dates Recipe
A healthy snack that the kids will love!! Filled with the goodness of dates, these make a healthy snack. Sweet and delicious, these are great to satisfy those midday sweet cravings without interfering with meal time!
Ingredients
Sifted flour - 2 cups
Lemon rind - 2 teaspoons, grated
Margarine - 2/3 cup
Creamed cottage cheese - 1 1/4 cups
Dates - 1 pound, pitted
Egg white - 1
Sugar - 3 tablespoons
Directions
MAKING
1) Combine the flour and lemon rind.
2) Using a pastry blender or 2 knives, cut in the margarine till the mix resembles bread crumbs.
3) Add in the cottage cheese and mix lightly till the concoction sticks together.
4) Refrigerate.
5) On a lightly-floured board, roll-out the dough to 1/4 inch thickness.
6) Cut in 2 1/2-inch squares.
7) Diagonally place a date over each square and roll up.
8) Firmly press down the corners and seal.
9) Lightly brush with egg white and sprinkle with sugar.
10) Place in the oven at 375°F and bake for 15 to 20 minutes.
