Ingredients
Tart pastry
1 1/2 teaspoons vanilla, divided
4 eggs
1 cup pecan halves
1/4 cup sugar
1/2 cup whipping cream
1/2 cup light brown sugar
2 tablespoons confectioners'
1/2 teaspoon salt
Sugar
1 1/2 cups light corn syrup
8 pecan halves
1 tablespoon butter, melted
Directions
Preheat the oven to 400° F 10 minutes before the tarts are ready to be baked.
Lightly oil 8 3 1/2 inch tart pans.
Roll out the dough 1/8 inch thick on a lightly floured board or pastry cloth.
Line the prepared tart pans with the pastry.
Place the tart shells in the freezer while making the filling.
Beat the eggs lightly.
Add the sugars, salt, corn syrup, melted butter, and 1 teaspoon of vanilla.
Mix well.
Divide the pecan halves among the tart shells.
Pour the filling over them.
Place the tarts on a baking sheet.
Reduce the heat to 350° F.
Bake at 350° F for 50 minutes.
Cool on a rack.
Whip the cream until stiff.
Add the confectioners' sugar and 1/2 teaspoon of vanilla.
Garnish each tart with whipped cream and a pecan half.
