Ingredients

 
3 cups firmly packed light brown sugar
 
1 cup heavy cream
 
1/4 teaspoon salt
 
1/4 cup butter or margarine
 
2 teaspoons vanilla extract
 
2 1/2 cups pecan halves or pieces

Directions

Combine brown sugar, cream and salt in a large, heavy saucepan.
Place over moderate heat and stir until sugar dissolves.
Cover pan and boil mixture for 3 minutes; remove lid and continue cooking without stirring until mixture reaches soft ball stage, or 232°F on a candy thermometer.
Remove from heat; add butter and cool to 200°F without stirring.
Add vanilla and pecans; beat until thick and creamy.
Drop mixture by teaspoonfuls onto buttered waxed paper, allowing room to spread.
Let stand at room temperature until firm.
