Pecan Mousse Recipe

Ingredients

 
1/2 cup pecan, chopped
 
1 tsp unflavored gelatin
 
2 tsp cold water
 
1 1/2 cup evaporated skimmed milk
 
1 tsp liquid sugar replacement or 2 tsp granulated fructose
 
1 tsp vanilla extract

Directions

Brown pecans in cake pan in 350°F (175°C) oven (about 10 minutes).
Shake occasionally.
Sprinkle gelatin over cold water and allow to rest 5 minutes to soften.
Combine milk and soften gelatin in saucepan; cook and stir over medium heat until gelatin is dissolved.
Remove from heat.
Add browned pecans, liquid sugar replacement and vanilla.
Stir to blend well.
Pour into mold, freezer tray or individual dishes and freeze until firm.
