Pecan Crusted Snapper With Scallions Recipe

1 scallion
1/2 cup chopped pecans
2 tablespoons fine unseasoned breadcrumbs
1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1 egg
1 tablespoon milk
4 red snapper fillets or other firm-fleshed white fish
About 1 tablespoon butter
1 tablespoon vegetable oil
Directions
1 Mince the scallion. Finely chop the pecans.
2 In a shallow bowl, combine the scallion, pecans and breadcrumbs. In another shallow bowl, combine the flour, salt and pepper. In a third shallow bowl, beat the egg and milk together.
3 Dredge the fish first in the flour mixture, then in the egg and finally in the pecan mixture.
4 In a large skillet, preferably nonstick, warm 1 tablespoon of the butter in the oil over medium-high heat until the butter is melted. Add the fish and cook for 3 minutes, or until golden on the bottom.
5 Carefully turn the fish and cook, adding a little more butter if necessary to prevent sticking, for 3 minutes longer, or until golden on the second side and the fish just flakes when tested with a fork.
