Pecan Butter Cookies Recipe
Ingredients
| Butter stick | 2 , softened | |
| 1/2 cup firmly packed dark brown sugar | ||
| Granulated Sugar | 1/4 Cup (16 tbs) | |
| Egg | 1 | |
| Vanilla extract | 1 Teaspoon | |
| Baking soda | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Flour | 1 1/4 Cup (16 tbs) | |
| Pecans | 1 1/4 Cup (16 tbs), coarsely chopped | |
Directions
1. In a medium bowl, with an electric mixer on medium speed, beat butter, brown sugar, and granulated sugar until creamy. Beat in egg, vanilla, baking soda, and salt until well blended.
2. Add flour to butter-sugar mixture and beat until blended. Stir in the chopped nuts. Cover and remgerate dough at least 1 hour, until chilled.
3. Preheat oven to 400°F. Drop heaping teaspoons of dough 2 inches apart onto greased cookie sheets. Bake 6 to 8 minutes, just until edges start to brown. Let stand 2 minutes on cookie sheets before removing to a rack to cool completely.
