1 boneless skinless chicken breast half (4 ounces), cubed
 
1/4 cup chopped onion
 
1 small potato, cubed
 
1 small carrot, sliced
 
1 cup chicken broth
 
1 garlic clove, minced
 
1/4 teaspoon dried tarragon, crushed
 
1/8 teaspoon salt, optional
 
Dash pepper
 
2 teaspoons chopped fresh parsley

Directions

Coat a saucepan with nonstick cooking spray; brown chicken over medium-high heat.
Add the next eight ingredients; bring to a boil.
Reduce heat.
Cover and simmer for 20-25 minutes or until vegetables are tender.
Sprinkle with parsley.
