Peas With Sorrel Recipe
Ingredients
1 kg (2 lb) fresh peas in pods
125g (4 oz) sorrel leaves
30g (1 oz) butter
salt and pepper to taste
2 spring onions (green shallots) chopped
2 tablespoons single (light) cream
Directions
1 Shell the peas and place in a pan with the sorrel and butter. Heat gently until the butter is bubbling, then add sufficient boiling water to just cover the peas. Cover and cook gently for 10-15 minutes, until the peas are almost tender.
2 Remove the lid and boil steadily for 2-3 minutes to reduce the liquid. Lower the heat and stir in the salt, pepper, spring onions (shallots) and cream. Warm through gently and serve immediately
