Peas Parmesan (Pisella Alla Parmigiana) Recipe
Ingredients
2 lb (1 kg) fresh shelled peas
1/3 cup (83 ml) olive oil
5 scallions, finely chopped
1/4 cup (62.5 ml) water
2 tablespoons chopped parsley
1 tablespoon chopped fresh basil
salt and pepper
1/2 cup (60 g) grated Parmesa n cheese
Directions
Saute the scallions in the oil for three minutes.
Mix in water, peas, parsley, basil and salt and pepper to taste.
Cover and cook for about 10 minutes or until peasare tender.
Do not overcook.
Drain peas and put in a hot serving dish.
Sprinkle with Parmesan cheese
