Ingredients

 
3 Oz. butter or margarine
 
1 Small onion (chopped)
 
2 Cloves garlic (chopped)
 
2 Tsp. dried mint
 
500 gms. fresh or frozen peas
 
3 Cups chicken stock
 
lOOgms. cream
 
Juice of a small lemon
 
Salt and pepper to taste.

Directions

Melt butter in a saucepan.
Add onion, garlic, mint, peas and stock.
Bring to a boil, cover and simmer for 15 mins.
Allow to cool and liquidise.
Add cream & lemon juice gradually.
Season and chill or serve hot.
