Peas Provencale Recipe
Ingredients
| Fresh peas - 3 pounds, shelled OR frozen peas - 3 cups (from 1 1/2 pound bag) | ||
| Onion | 1 Large, chopped | |
| Garlic | 1 Clove (5gm), minced | |
| Olive oil or vegetable oil - 2 tablespoons | ||
| Tomatoes - 2 medium-size, peeled and chopped | ||
| Salt | 1/2 Teaspoon | |
| Pepper - a pinch | ||
Directions
GETTING READY
1) in a medium-size saucepan, boil water with little salt.
MAKING
2) In the boiling water, add fresh peas and cook for10 minutes or until tender. If using frozen peas, just boil them once.
3) Drain the peas.
4) In a pan, add oil, saucte onion and garlic until soft.
5) Add tomatoes and stir with salt and pepper.
6) Cook the vegetables for 20 minutes, stirring frequently until thickens.
7) Add peas and simmer for extra 5 minutes.
SERVING
8) Serve the peas provencale as side dish.
