Peas and Lettuce Recipe
Ingredients
| Butter | 2 Tablespoon | |
| 6 green onions, white and green parts, thinly sliced | ||
| 1 small head Boston or Bibb lettuce, shredded fine | ||
| Peas | 4 Pound | |
| 4 tablespoons water or chicken consomme | ||
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
| Ground nutmeg | 1/8 Teaspoon | |
| 1 teaspoon dried thyme or 1 sprig of fresh thyme | ||
| Parsley | 1/4 Cup (16 tbs), minced | |
Directions
Heat the butter in a heavy saucepan which has a tight cover.
Add the green onions and the shredded lettuce.
Stir to coat the greens with the butter.
Add all the other ingredients except the parsley.
Cover tightly and simmer over low heat for 5 to 10 minutes or until the peas are tender.
Sprinkle with parsley before serving.
