Peas And Dumplings Recipe
Peas and dumplings is a green peas recipe with flour dumplings. Cooked with mint flakes for flavor, the peas and dumplings is a simple vegetable recipe and can be prepared with added veggies too.
Ingredients
1/2 cup skim milk
1/2 cup low sodium chicken broth
1/2 teaspoon mint flakes
1/2 teaspoon black pepper
1/2 cup sifted all purpose flour
1/4 teaspoon baking powder
Pinch salt
1 teaspoon cold unsalted margarine
4 teaspoons ice water
1 1/2 cups fresh green peas or 1 package frozen green peas
Directions
In a medium size saucepan, heat the milk, chicken broth, mint, and pepper, covered, until the mixture bubbles gently; simmer, covered, over low heat for 5 minutes.
Meanwhile, sift the flour, baking powder, and salt into a small bowl.
Cut the margarine into tiny pieces and work them into the flour with a fork or your fingertips until the mixture resembles coarse meal.
Add the water and stir it in with a fork to dampen the mixture.
Drop the dough, a teaspoonful at a time, into the simmering liquid; cover and cook for 5 minutes.
Add the peas and simmer 5 minutes more or until the dumplings are firm.
