Pears Poached In Red Wine With Basil Recipe
Ingredients
16 firm ripe pears, with stems
2 1/2 cups sugar
8 cups water
3 branches fresh rosemary or
Juice of 1 large lemon
2 1/2 teaspoons dry rosemary
5 1/2 cups dry red wine
Directions
Peel pears and slice off a bit of the bottom so that pears can stand up.
Place peeled pears in mixture of water and lemon juice as they are peeled.
Mix the wine and sugar with rosemary and boil for 5 minutes.
Add pears and simmer, covered until they are tender. (That will depend on how ripe they are.)
Baste often while pears are simmering.
Remove pears, boil syrup to reduce slightly and pour hot syrup over pears.
Serve at room temperature or chilled.
NOTE TO COOK: Prepare pears and carry to party in tightly covered plastic container.
Arrange on serving dish at party.
