Pears Poached In Red Wine Recipe

Ingredients
8 firm pears, with stems
8 whole cloves
2 cups dry red wine
2 cups water
1 cup sugar
Grated rind of 1 lemon
Directions
Peel pears, leaving stems intact.
Cut out blossom end and insert clove in its place.
In an enameled saucepan just large enough to hold pears, heat wine and water with sugar and lemon rind, stirring to dissolve sugar.
Add pears and simmer, covered, 20 to 30 minutes or until pears are tender but still firm.
Turn pears 2 or 3 times while cooking.
Chill in cooking liquid.
Pears will turn a deep red if refrigerated 1 day before serving.
Carry in a cooler.
Serve with their juice.
