Ingredients

 
2-6 firm bosc pears
 
2.5 cups marsala wine (or red wine or hard cider)
 
0.25 cups superfine sugar
 
0.5 vanilla bean
 
1.5 cinnamon sticks
 
1 Tbs cornstarch
 
1 Tbs cold water

Directions

Peel pears, but leave stem intact. Slice a thin slice from bottom so pears
can stand upright, do not core.
Place pears in a single layer in a casserole dish that has a lid. Preheat oven
to slow (250 F). Pour marsala over pears. Sprinkle with sugar and add vanilla bean and
cinnamon sticks. Bring to a simmer over a medium flame. Cover dish and place in
oven, after 1.5 hours remove and turn pears over. Return to oven for 1.5 hours.
Remove from oven, carefully move pears to serving dish. Remove cinammon sticks from poaching
liquid, remove vanilla bean and squeeze seeds into dish. Mix cornstarch with cold water to blend
add to poaching liquid and bring to a boil over medium high heat, whisking constantly. Boil
while stirring for 1 min. Let cool to lukewarm, then spoon sauce over and around pears.
Chill several hours. Serve as is, or with vanilla ice cream, creme fraiche or vailla yogurt
