Ingredients

 
1 (12 ounces) can pears
 
1 package slivered almonds
 
Sauce:
 
3/4 cup pear juice
 
2 tablespoons tea leaves
 
2 egg yolks
 
3/4 cup heavy cream, whipped

Directions

1. Roast almonds in a shallow pan in a 350° Foven until lightly browned (about 15 minutes). Drain pears, reserving juice. Bring 3/4 cup pear juice to a boil. Remove from heat and let tea leaves soak in juice for about 3 minutes. Drain and discard the tea leaves.
2. Beat in egg yolks and let boil until sauce thickens, stirring constantly. Place pot in cold water and let cool while stirring. Whip cream and mix with sauce. Place pears in serving dish and sprinkle with almonds.
