Pears With Stewed Meat Recipe
Ingredients
12 small pears
1/2 teaspoon tarragon
1 1/2 to 2 pounds beef (chuck)
6 cups beef broth
4 medium sized potatoes, peeled and cut into large chunks
Directions
Place the pears and tarragon in a saucepan and add water to cover.
Simmer the pears, covered, for 2 hours.
Meanwhile, cook the beef in the broth about 2 hours or until tender.
Cook the potatoes, covered, in boiling salted water about 20 minutes or until tender.
Drain the pears and arrange in the center of a platter.
Slice the meat and place the slices around the pears.
Finally, arrange the potatoes around the meat.
Moisten with a little of the broth or pear-cooking liquid and pass the rest separately.
