Pears With Pastry Cream Recipe
Ingredients
4 cups (1 L) water
1 1/2 cups (375 ml) granulated sugar
1 tbsp (15 ml) lemon juice
2 tbsp (30 ml) light rum
6 pears, cored and peeled
1 1/2 cups (375 ml) pastry cream
4 egg whites, beaten stiff
1/4 cup (50 ml) hot rum
Directions
Place water, sugar, lemon juice and light rum in saucepan; bring to boil and continue cooking 4 minutes over medium heat.
Add whole pears and reduce heat.
Cook 6 to 7 minutes over low heat.
Remove saucepan from heat and let pears cool in syrup.
Pour pastry cream into ovenproof baking dish.
Arrange pears in cream and decorate sides of dish with beaten egg whites.
It is best to use pastry bag and nozzle for this.
Broil 2 minutes or until lightly browned.
