 2 large dessert pears, peeled, halved and cored
 Lemon juice1 Teaspoon
 40 g/1 1/2 oz unsalted butter, softened
 75 g/3 oz blue cheese, such as Roquefort, crumbled
 Lettuce leaves4 Large

Directions

Brush the pears all over with the lemon juice to prevent discoloration.
Mix together the butter and blue cheese, mishing with a fork.
Form into four balls.
Place a lettuce leaf on each of four small plites.
Place a pear half on each, cut side up, and top with a cheese ball.
Chill for 30 minutes before serving.
