 Lemon juice1
 Water1 Liter
 Caster sugar400 Gram
 1 vanilla pod, split open

Directions

Peel and halve the pears, and remove the core.
Dip quickly in the lemon juice to prevent them discolouring Put the water, sugar and vanilla pod into a pan and bring to the boil.
Add the pears to the syrup and simmer gently over low heat for 15-20 minutes or until cooked through but do not let them overcook - they should remain slightly firm.
Leave to cool in the syrup.
