| Sugar | 6 Ounce | |
| 4 fl. oz. water | ||
| Cinnamon stick | 2 Inch, pared | |
| Rind of 1 lemon | ||
| 4 fl. oz. red wine | ||
Directions
With a sharp knife, peel the pears.
Place the pears, sugar, water, cinnamon stick and lemon rind in a large saucepan.
Place the pan over moderate heat, cover and cook the pears for 10 minutes.
Add the wine, reduce the heat to very low and simmer, turning occasionally, for a further 20 to 25 minutes or until the pears are tender but still firm when pierced with a sharp knife.
Using a slotted spoon, transfer the pears to a serving dish and set aside.
Increase the heat to high and boil the cooking liquid for 8 minutes or until it has thickened slightly.
Remove the pan from the heat and strain the liquid over the pears.
Set the dish aside at room temperature until the pears are cool, then chill them in the refrigerator for at least 1 to 1 1/2 hours before serving.
