Pears Poached in Marsala Recipe
Ingredients
| Sweet Marsala wine- 4 cups | ||
| Sugar | 1/2 Cup (16 tbs) | |
| Orange zest | 2 Inch | |
| Pears, Bosc, Bartlett, or Red Bartlett- 4 | ||
Directions
MAKING
1.In a large saucepan, combine the first 3 ingredeints with 3 cups of water, and boil it, keep stirring occasionally to dissolve the sugar, later reduce the heat to a lower simmer
2. Take a sharp knife and use it to core the pears from the bottom, but leave the stems intact
3. Using the same knife slice the bottom of the pears so that they can sit upright, and using a small sharp knife, peel the pears by marking from top to the bottom in a single motion, it makes the pears look pretty
4. In a pan, filled with simmering liquid, drop the pears gently and increase the heat to medium, poach for 25 minutes, turn a few times, until they can be pierced with a kitchen knife, finally remove the pan from the heat and let the pears cool to room temperature in the liquid
5. Lift the pears from the poaching liquid and set aside, but use the liquid to cook over medium-high heat for 10 minutes, till qunatity reduces to 1 cup
6. It should be a light, sweet syrup, but if required, prevent the sweetness by adding a little added water
7. On a platter, place the pears and pour the syrup over them, serve immediately
