Pears In Red Wine Recipe
Ingredients
| 2 cups red or white wine or 1 cup each red and white wine | ||
| Grated rind of 1 lemon | ||
| Lemon juice | 2 Tablespoon | |
| Sugar | 3/4 Cup (16 tbs) | |
| Ground cinnamon | 1/2 Teaspoon | |
| 4 firm, ripe pears, such as Anjou, Bosc, or Bartlett | ||
Directions
1. Combine the wine, lemon rind, lemon juice, sugar, and cinnamon in a 2-quart saucepan. Bring to a boil, reduce the heat, and simmer, uncovered, until the sugar has melted.
2. Meanwhile, peel, halve, and core the pears. When the sugar has melted, drop the pears into the syrup. Add more wine or water, if necessary, to cover the pears. Simmer for 8 minutes, turning the pears once, until they are just tender. Let cool for 20 minutes, and serve with the syrup.
