Pearl Onion And Orange Braise Recipe
Ingredients
4 cups pearl onions 1 L
1 tsp grated orange rind 5 mL
3/4 cup orange juice 175 mL
1 tbsp olive oil 15 mL
1/2 tsp salt 2 mL
1/4 cup currants 50 mL
Pepper
2 tbsp chopped fresh parsley 25 mL
Orange slices
Directions
In large pot of boiling water, boil onions for 3 minutes; drain and refresh under cold water.
Peel onions; trim root ends, leaving intact so onions don't fall apart.
In saucepan, simmer onions, orange rind and juice, oil and salt, covered, over medium low heat for 15 minutes.
Add currants; simmer, uncovered, for 20 minutes or until onions are tender and glazed. (Onions can be cooled, covered and refrigerated for up to 2 days; reheat gently over medium low heat or in 325°F/160°C oven for 20 minutes or until heated through.)
Season with pepper to taste.
Sprinkle with parsley.
Garnish with orange slices.
