Pear Burritos Recipe
Ingredients
| 4 pears, peeled, cored, and sliced | ||
| Ground cinnamon | 1/2 Teaspoon | |
| Apple Juice | 1/2 Cup (16 tbs) | |
| 6 large nonfat tortillas | ||
| Brown sugar | 1/2 Cup (16 tbs), firmly packed | |
| 1/2 cup nonfat grated cheese | ||
Directions
Place pears, apple juice, brown sugar, and cinnamon in a saucepan.
Bring to a boil, reduce heat, and simmer until pears are crisp-tender.
Drain the pears, reserving the cooking liquid.
Preheat oven to 350 degrees.
Use a shallow nonstick baking pan, or line a shallow baking pan with a baking pan liner or lightly spray with vegetable cooking spray.
Spoon 1/6 of the pears into the middle of each tortilla and sprinkle with cheese.
Spread the filling evenly over the surface of the tortilla, leaving a 1/2-inch border all around.
Starting at one end, roll up the tortilla, folding up the left and right edges as you go.
Place rolled tortillas seamside down on the baking pan.
Spoon the reserved apple juice from the saucepan over the burritos.
Bake burritos for 10 minutes or until they begin to brown.
Serve at once.
