Pear Raspberry Cottage Cheese Salad Recipe
Ingredients
| 2 ripe medium pears | ||
| Lettuce leaves | ||
| Lemon juice | ||
| Cottage cheese | 1 Cup (16 tbs) | |
| 1/3 cup seedless red raspberry jam or red currant jelly | ||
| Fresh raspberries or red seedless grapes, if desired | ||
Directions
Cut each pear in half; remove core.
Slice each pear half into 4 slices.
Arrange 4 slices on each of 4 lettuce-lined plates.
Brush cut surfaces of pear slices with lemon juice.
Spoon 1/4 cup cottage cheese onto each plate next to pear slices.
Melt jam in small saucepan over low heat, stirring constantly.
Spoon over cottage cheese and pear slices.
Garnish with raspberries.
