Ingredients

 
2 cups all-purpose flour
 
3/4 cup sugar
 
2 teaspoons baking soda
 
1/2 teaspoon salt
 
1/4 teaspoon ground cardamom or 1 teaspoon ground cinnamon
 
2 beaten eggs
 
1/2 cup cooking oil
 
2 tablespoons milk
 
1 teaspoon grated gingerroot
 
2 medium pears, peeled, cored, and finely chopped
 
3/4 cup chopped walnuts
 
1/2 cup raisins

Directions

1 In a large mixing bowl combine the flour, sugar, baking soda, salt, and cardamom or cinnamon. Make a well in the center. Combine the eggs, oil, milk, and gingerroot; add all at once to flour mixture. Stir just until moistened (batter will be thick). Fold in the chopped pears, walnuts, and raisins.
2 Lightly grease muffin cups or line with paper bake cups; fill each three-fourths full. Bake in a 350° oven for 20 to
25 minutes or until a toothpick inserted near the center of muffins comes out clean. Remove muffins from cups; serve warm.
