Pear Cantaloupe Chutney Recipe
Ingredients
| Pears | 4 | |
| Cantaloupe | 4 Cup (16 tbs), diced | |
| Pitted dates | 1/2 Cup (16 tbs), sliced | |
| Onion | 1/2 Cup (16 tbs), chopped | |
| Chopped ginger | 2 Tablespoon, preserved | |
| 2 tbsp. slivered lemon rind | ||
| Cider vinegar | 1 Cup (16 tbs) | |
| Brown sugar | 1 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Hot Sauce | 6 Drop | |
| Green pepper | 1/2 Cup (16 tbs), chopped | |
Directions
Peel and core pears; slice lengthwise.
Combine pears, cantaloupe, dates, onion, ginger and lemon rind with vinegar, brown sugar, salt and hot sauce.
Bring to a boil; reduce heat.
Simmer, stirring occasionally, for 40 minutes or until thickened.
Add green pepper; simmer for 5 minutes longer.
Seal in sterilized jars.
