 Pears4
 Cantaloupe4 Cup (16 tbs), diced
 Pitted dates1/2 Cup (16 tbs), sliced
 Onion1/2 Cup (16 tbs), chopped
 Chopped ginger2 Tablespoon, preserved
 2 tbsp. slivered lemon rind
 Cider vinegar1 Cup (16 tbs)
 Brown sugar1 Cup (16 tbs)
 Salt1 Teaspoon
 Hot Sauce6 Drop
 Green pepper1/2 Cup (16 tbs), chopped

Directions

Peel and core pears; slice lengthwise.
Combine pears, cantaloupe, dates, onion, ginger and lemon rind with vinegar, brown sugar, salt and hot sauce.
Bring to a boil; reduce heat.
Simmer, stirring occasionally, for 40 minutes or until thickened.
Add green pepper; simmer for 5 minutes longer.
Seal in sterilized jars.
