Pear Bread Recipe

Ingredients
1/2 tablespoon active dry yeast
1/3 cup warm water (105°-115°F)
l 1/2-2 1/2 cups flour
1/4 teaspoon salt
3 tablespoons sugar
3 tablespoons unsalted butter, softened
1 egg
Filling
3/4 cup water
3/4 cup coarsely chopped dried pears
1/3 cup pitted, coarsely chopped dried prunes
1/4 cup golden raisins
2 tablespoons lemon juice
1/4 cup chopped walnuts
1 tablespoon sugar
1/2 teaspoon grated lemon peel
1/4 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
Glaze
1 egg, beaten with 1 tablespoon milk
Directions
1 Dissolve yeast in warm water. Set aside for 5 minutes. Combine 1 cup flour, salt, sugar, and softened butter. Add yeast mixture and egg. Mix thoroughly.
2 Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
3 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
4 Prepare the filling while dough is rising. Boil water in a small saucepan. Add pears, prunes, raisins, and lemon juice to water. Simmer fruit over low heat, stiring frequently, for 10 minutes or until so tender it can be mashed easily.
5 Drain fruit. Puree it in a blender. Combine the walnuts, sugar, lemon peel, cinnamon, and nutmeg with the puree. Mix thoroughly. This mixture will be thick.
6 Grease a large baking sheet. Punch down dough. Roll dough into a square 9x9 inches.
7 Spread the filling on dough, covering all but a 1-inch margin. Roll the dough jelly-roll style. Place on greased baking sheet seam side down. Make glaze and brush on loaf. Let rise in warm place until double€”about 30 minutes.
8 Bake in a preheated 350°F oven 30€”40 minutes or until done. Cool on wire rack.
