15 large pears, peeled and ground
 
12 apples, peeled and chopped
 
2 3/4 cups raisins, ground
 
2 1/4 cups firmly packed brown sugar
 
1 cup sugar
 
1 unpeeled orange, seeded and ground
 
1/2 cup vinegar
 
1 tablespoon salt
 
2 teaspoons ground cinnamon
 
1 teaspoon ground nutmeg
 
1 teaspoon ground cloves
 
1/2 teaspoon ground ginger

Directions

Combine all ingredients in a large Dutch oven; bring to a boil, stirring constantly.
Spoon hot mixture into hot jars, leaving 1 inch headspace.
Remove air bubbles; wipe jar rims.
Cover at once with metal lids, and screw on bands.
Process in boiling water bath 25 minutes.
