Ingredients

 Red potatoes12 Small
 Pears2
 Scallions2 Tablespoon, minced
 Raisins2 Tablespoon
 Peanuts2 Tablespoon, chopped
 Red onions1 Tablespoon, chopped
 Chicken stock1/3 Cup (16 tbs)
 Canola oil3 Tablespoon
 Vinegar1 Tablespoon
 Orange juice concentrate - 2 teaspoons
 Cinnamon1/8 Teaspoon
 Ginger root1/8 Teaspoon, peeled
 Allspice1/8 Teaspoon
 Pepper1/8 Teaspoon

Directions

MAKING
1.Cut the potato into halves or quarters.
2. Steam the potatoes for about 8 to 10 minutes, or until easily pierced with a fork and place in a large bowl.
3. Combine the pears, scallions, raisins, peanuts, and onions.
4. In a small bowl, whisk together the stock, oil, vinegar, orange juice concentrate, cinnamon, ginger, allspice, and red pepper.
5.Pour over the salad and toss it gently to combine well.

SERVING
6. Serve as an excellent appetizer.
