Pear and Potato Salad Recipe
Ingredients
| Red potatoes | 12 Small | |
| Pears | 2 | |
| Scallions | 2 Tablespoon, minced | |
| Raisins | 2 Tablespoon | |
| Peanuts | 2 Tablespoon, chopped | |
| Red onions | 1 Tablespoon, chopped | |
| Chicken stock | 1/3 Cup (16 tbs) | |
| Canola oil | 3 Tablespoon | |
| Vinegar | 1 Tablespoon | |
| Orange juice concentrate - 2 teaspoons | ||
| Cinnamon | 1/8 Teaspoon | |
| Ginger root | 1/8 Teaspoon, peeled | |
| Allspice | 1/8 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
Directions
MAKING
1.Cut the potato into halves or quarters.
2. Steam the potatoes for about 8 to 10 minutes, or until easily pierced with a fork and place in a large bowl.
3. Combine the pears, scallions, raisins, peanuts, and onions.
4. In a small bowl, whisk together the stock, oil, vinegar, orange juice concentrate, cinnamon, ginger, allspice, and red pepper.
5.Pour over the salad and toss it gently to combine well.
SERVING
6. Serve as an excellent appetizer.
