Pear and Parma Ham Open Sandwiches with Honey Mustard Recipe

Ingredients

 3 tablespoons thick honey
 Dijon Mustard1 Tablespoon
 2 teaspoons soft dark brown sugar
 4 thick slices of Russian or German sourdough rye bread
 1 ripe but firm Conference or Williams pear
 4 slices Parma ham large handful of watercress pepper

Directions

1. Mix together the honey, mustard and soft brown sugar to make a smooth paste.
2. Spread the honey mustard over the slices of bread. Cut the pear in half lengthways without peeling it, then cut it into quarters.
3. Cover each piece of bread with the slices of Parma ham. Add a pile of watercress leaves and grind pepper over the top. Add the pears to the plate and serve straightaway with knives and forks.
