Ingredients

 Canola oil1 Tablespoon
 3 pears, peeled, cored, and diced
 Sugar1 Teaspoon
 8 Nicoise or Kalamata olives, pitted and sliced
 3 Roma tomatoes, oven-roasted and diced
 1 small poblano chile, roasted, peeled, seeded, and diced
 Roasted red pepper1 Small, peeled
 1 tablespoon La Carreta cilantro apple cider vinegar or other cider vinegar

Directions

Heat the oil in a pan and saute the pear with the sugar over medium-low heat for 2 minutes.
Transfer to a mixing bowl.
Thoroughly combine with the remaining ingredients.
