Peanut Coleslaw Recipe Video
Coleslaw is one of my favorite sides to eat with any kind of sandwich. I especially love to pile it high on top of a sandwich...yum!!
Try serving this with my Tuna Burgers, they're a match made in heaven!

Ingredients
* 1 Savoy cabbage, thinly sliced (about 8 cups)
* 1/2 cup of chopped cilantro
* 1 small onion, thinly sliced into ½ moons
* 1 tsp of grated ginger
* Juice of 1/2 a lime
* 2 tbsp. of rice vinegar
* 2 tbsp. of tamari
* 3 tbsp. of peanut oil
* 1 clove of garlic, crushed
* 4 scallions, sliced
* 1/2 cup of roasted, salted peanuts
* Salt and pepper to taste
Directions
1. Combine ginger, garlic, vinegar, tamari, lime juice, peanut oil, and scallions in a small bowl. Season with salt and pepper. Whisk and set aside.
2. Combine cabbage, onion, and cilantro in a large bowl. Pour dressing over cabbage and combine.
3. Top with peanuts and Enjoy!!
* This slaw is best when eaten within 60 minutes of preperation.
