Ingredients

 
Hot milk- 1 cup
 
Boiling water- 1 quart
 
Yellow corn-meal- 1 cup
 
Hominy grits- 3/4 cup
 
Salt- 1 1/4 teaspoons
 
Paprika- 1/8 teaspoon
 
Peanuts- 1 1/2 cups, chopped
 
Cheese- 1/4 to 1 cup, grated

Directions

GETTING READY
1.Start by preheating the oven to 400F degrees
MAKING
2.In a boiler, combine hot milk and boiling water
3.Now bring to boiling point then add corn meal, hominy grits and seasoning
4.Make sure to keep stirring constantly until the liquid is thickened by the cereal
5.In a double boiler, place the mixture and cook for 1 hour
6.Add the peanuts and cheese to the boiler, just 10 minutes before taking up
7.In a deep rectangular bread pan, place the mixture and allow it to cool
8.When ready to use, cut in small slices (roll in egg and crumbs if desired)
9.In a greased baking-pan, place the mixture and sprinkle with grated cheese mixed with bread crumbs and bake in a moderate oven until brown
SERVING
10.Serve with a warm syrup or sauce
TIPS
Alternate method is to fry in deep fat (375°-390° F.) until brown (2-5 minutes). This dish makes an excellent luncheon or supper dish
