Ingredients

 
1 Chicken
 
1/3 Tsp. Salt
 
Dash Fresh or Ground Pepper
 
1 Large Clove Garlic
 
1/2 Cup or so of Soy Sauce
 
Dash of M.S.G. (optional)
 
2 Eggs
 
Cornstarch, as needed
 
Sauce:
 
1 Rounded Tbs. Cornstarch
 
1/2 Cup Cold Water
 
1/3 Cup Sugar
 
1/2 Tsp. Salt
 
1/2 Tsp. M.S.G. (optional)
 
2 Tbs. Vinegar
 
2 Tbs. Catsup
 
1/2 Head Lettuce (approximately)
 
1 to 1 1/2 Cups Fresh Pineapple Chunks or Unsweetened Canned Chunks
 
1/8 Cup or so of Chopped Green Onion
 
1/2 Cup Chopped Peanuts, or more if you desire

Directions

Bone and skin an uncooked chicken.
Cut into bite size pieces.
Soak in salt, ginger, soy sauce, chopped garlic and M.S.G. for a few hours.
Dip chicken into beaten eggs Coat with cornstarch.
Fry in deep fat or oil until done and golden brown.
Sauce: Dissolve cornstarch in water in a small pan.
Add remaining ingredients and stir until thickened.
Now add the pineapple juice and some pineapple chunks.
The platter can be arranged with sliced lettuce.
Place chicken pieces over the lettuce and pour sweet and sour sauce over the chicken.
Garnish with remaining pineapple, the peanuts and green onion.
Serve with rice, tea or white wine.
