Peanut Butter Oat Muffins Recipe

Peanut butter oat muffins brings together the healthy goodness of oats with the smooth taste of peanut butter. Baked with some added raisins, yogurt and honey this muffin recipe is really a delightful little snack. The flavor of the vanilla also gives this peanut butter oats muffin a classic taste.

Ingredients

 
11/2 cups whole-wheat flour 375 mL
 
11/2 cups rolled oats 375 mL
 
4 tsp baking powder 20 mL
 
l tsp salt 5mL
 
l tsp baking soda 5mL
 
1/2 cup raisins 125 mL
 
1 cup plain yogurt 250 mL
 
3/4 cup liquid honey 175 mL
 
1/2 cup peanut butter 125 mL
 
1/3 cup vegetable oil 75 mL
 
3 eggs, lightly beaten
 
l tsp vanilla 5mL

Directions

In a large bowl, combine flour, oats, baking powder, salt and baking soda.
Stir in raisins.
In another bowl, beat together yogurt, honey, peanut butter, oil, eggs and vanilla until smooth.
Add to dry ingredients and stir just until moistened and blended.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 25 to 30 minutes or until done.
HINT: For a special treat, spread peanut butter on butter cookies or vanilla wafers.
Place a toasted marshmallow between two cookies or wafers and press together slightly and - voila! - a Peanut Butter Puff.
