Ingredients

 
1.5 cups flax seed meal
 
.5 cup Rolled oats (if you don't eat oats just use another .5 cup of the flax meal)
 
1 cup unsweetened shredded coconut
 
.5 cup Peanut Butter, Natural Creamy or Chunky (I used chunky...no sugar added)
 
Sweetzfree to taste (I used 25 drops) or 1/2 cup granular Splenda
 
1 tbsp banana extract (optional)
 
1 tsp vanilla extract
 
6 egg whites
 
1/2 cup water
 
1 tbsp Cinnamon (optional)

Directions

Mix dry ingredients in one bowl and wet ingredients in another bowl. Then combine together and mix well.
Spread in a greased baking dish and bake until completely dry at 250 degrees for 3-3.5 hours. After about an hour and a half take a spatula and make 16 bars. Put back in oven. After 30 more minutes flip them over until finished (If you don't flip them they tend to stay to moist on the other side). They should be pretty dried out.
Cool and store in an airtight container or ziplock bag.
Makes 16 bars
