Peanut Butter Cookies Recipe
Ingredients
1/8 cup butter or margarine
1/4 cup creamy or crunchy peanut butter
3/4 cup sugar
1 egg
2 cups self-raising flour
1/2 teaspoon cinnamon
1/2 cup roasted blanched peanuts
Directions
In the work bowl, cream the butter, the peanut butter and the sugar, add the egg and process for 10 seconds.
Add the flour and the cinnamon.
Process until mixed.
Add the peanuts which have been previously finely chopped in the work bowl.
On a sheet of aluminium foil form a roll about 5 cm (2 in) in diameter, wrap and refrigerate for several hours until firm.
Preheat oven to 190°C (375°F).
Cut the roll 3 mm (1/8 in) thick and place 2 1/2 cm (1 in) apart on an ungreased baking tray.
Bake for 6-8 minutes until light brown.
Cool on the tray for 1 minute, transfer to wire rack and cool.
