Peanut Butter Chiffon Pie Recipe

For all the die-hard fans of peanut butter comes this very fine and delicious recipe of Peanut Butter Chiffon Pie. An improved version of my mom's peanut butter recipe, this Peanut Butter Chiffon Pie is flavored with vanilla and is made on baked pastry shell. Ingredients

 
1 tbsp. gelatin
 
1 cup cold water
 
1/4 cup sugar
 
2 eggs, separated
 
1/2 tsp. salt
 
1/2 cup peanut butter
 
1/2 tsp. vanilla
 
1 baked pastry shell

Directions

Soften gelatin in 1/4 cup water.
Beat egg yolks well, add 1/8 -cup sugar, 1/4 cup water, and salt in top of double boiler blend.
Add gelatin.
Place over boiling water and beat constandy with rotary beater until fluffy and thick.
Cool.
Combine peanut butter and remaining water (1/2 cup), add egg mixture and vanilla blend.
Chill.
Beat egg whites, adding remaining sugar gradually until stiff.
Fold into peanut butter mixture.
Turn into baked pie shell (or crumb or flake crust) and chill until firm.
Top with chopped nuts or whipped cream if desired.

This sounds like a recipe I have been searching for for years! I am going to try it. There is a place in Oregon called Karen's Kitchen, formerly Kirby's Kitchen that make a peanutbutter pie to die for! I hope this is it.
